Department of Half-Formed Ideas: Carnivore Cool?

One of the things we’ve been noticing for a while now is that there’s been a move away from the interesting/hip/cutting-edge/talked-about/whatever restaurants in Brooklyn serving an array of vegetarian and vegan options, and much more of a focus on meat, meat, all things meat. I’m slowly forming a grand unifying theory/article pitch about this in my head, but I want to know if anyone else outside of Brooklyn has noticed similar things in their cities?

  1. There’s a couple of hipster southern-fried-food restaurants in Milwaukee-Palomino, Honey Pie, and Comet Cafe. They’ve all got vegan option (meat stand-ins, like Tofurky or setain bbq), but they all have a lot of meat. For Sunday brunch, one of them of them puts out baskets of bacon instead of bread. Honey Pie, the newest one, is midwestern comfort-food themed- homemade sausages, turkey dinners, etc, with a side of irony..
